Kids and Carbs for the Holidays

Combine 1.5 c. of soy powder or flour with .5 c granular sugar substitute (half that if using Stevia), 1.5 cinnamon, 1.5 t. nutmeg, .5 t salt, .5 t. baking soda, .5 t. baking powder in one bowl. In second bowl, combine .5 c. vegetable oil, 4 eggs, 2 medium zucchini grated, 1 t. vanilla extract. Mix thoroughly and then combine dry and wet ingredients. Heat oven to 350 degrees and put mixture into small loaf pan, for about 45 minutes.
